Clean and Sign action

In the Settings tab, select Clean and Sign as your action.

When signEZ is set to Clean and Sign you'll see it on the action button:

The Clean and Sign action will sign selected design element (like the Sign action) plus it will delete the $UpdatedBy field for you. Upon saving the document, Lotus Notes will recreate this field with the appropriate information (i.e. the current signer of the design element).
